My son loves cake a lot, so i thought of preparing it at home and was looking for recipe. I tried many version but i like the one which i am sharing here. It is from Nita Mehta's basic eggless vanilla cake. This cake recipe is very easy to prepare.
RECIPE:
Cooking Time: 35-40 mins
Preparation Time: 10-12 mins
Ingredients:
All purpose flour: 1 and 1/2 cup
Curd: 1 cup
Sugar: 3/4 cup
Baking soda: 1/2 tsp
Baking pwd: 1 and 1/4 tsp
Oil: 1/2 cup
Vanilla essence: 1 tsp

Method:
- Preheat oven to 200 C for 10 mins. Grease and flour the baking tray.
- Cream the sugar and yogurt/curd until the sugar is completely dissolved. Add baking powder and baking soda and mix well. Keep aside for 4-5 mins and you will find that bubbles appear.
- Now add vegetable oil and vanilla essence and mix well.
- Now slowly add little portion of flour/maida at a time and blend with the wet ingredients. Beat well until creamy.
- Bake in preheated oven at 200 degree C for 10 mins, reduce temperature to 175 and bake for 25-30 mins or till a toothpick inserted into the cake comes out clean.
- Cool the cake for 15-20 mins and then invert in plate.
