Malai Kofta is a delicious recipe where kofta is dipped/served in rich and creamy gravy. It is a North Indian specialty.

Ingredients:
For Kofta:
Paneer: 100 gms
Potato: 1 medium(boiled & mashed)
Peas: 1/4 cup(blanched and semi mashed)
Garam masala: 1/2 tsp
Cornflour: 1-2 tbsp
Salt to test
Coriander leaves:1 tbsp(finely chopped)
Oil for deep frying
For gravy:
Onion: 2 large(finely chopped)
Tomato: 2 large(Finely chopped))
Cashew: 10-12
Ginger garlic paste: 1tsp
Turmeric pwd: 1/4 tsp
Coriander pwd: 3/4 tsp
Cumin pwd: 1 tsp
Garan masala: 1 tsp
Chilli pwd: 1/4 tsp

Method:
For Kofta:
- Mix the potato, paneer and peas.
- Add the garam masala, salt, chopped coriander leaves, cornflour and mix well.
- Divide the mixture into small size ball.
- Heat oil in pan/kadai and deep fry those ball
For Gravy:
- Heat 1-2 tsp oil in pan and saute the paneer for a min and transfer it to hot water (this keeps paneer soft)
- Soak the cashew in warm water for 15-20 min and then make a fine past
- Heat 1-2 tsp oil in pan and add chopped onion, saute for 2-4 min then add chopped tomato and saute for 2-4 min.
- Cool down onion tomato mixture and then grind it
- Heat 2-3 tsp oil in pan and add ginger garlic past cook for min then add onion tomato paste and all dry powders and cook for 6-7 min.
- Add cashew paste mix well and cook for another 5 mins.
- Add water as per your desire thickness and cook for few mins.
- Now place kofta in serving bowl and pour the gravy over it.
- Serve with paratha/rice/pulao.
Note:
Can add milk/cream in gravy to give more creamy texture.
