Veg Upma is simplest breakfast option. Upma is prepared using rava and few veggies. It is well known South Indian breakfast.

Ingredients:
Rava: 1 cup
Onion: 1 small(finely chopped)
Green chilli: 1(finely chopped)
Carrot: 1/4 cup(finely chopped)
Green peas: 1/4 cup
Curry Leaves: 5-8 nos
Coriander Leavea: 2 tbsp( finely chopped)
Lemon juice: 1 tsp
Split urad dal: 1/3 tsp
Rai/mustard seed: 1/4 tsp
Salt to taste
Oil for cooking

Method:
- Dry roast rava, till light brown in color.
- Now 1-2 tbsp oil in pan/kadai and add mustard seed, when it start spluttering then add urad dal and curry leaves.
- Now add green chilli and onion, and fry for 3-4 mins.
- Then add carrot and cook till carrot is soft. Now add peas and cook for another 3-4 mins.
- Meanwhile boil 2 cups of water and keep aside.
- Now add boiling water and salt to fried ingredients.
- Add roasted rava slowly and mix well, add chopped coriander and lemon juice and mix well
- Serve hot with chutney.
