As Christmas is nearing I thought of making something which is loved by all children; the only thing came in my mind is "CAKE". Since there are not much ingredients available at home, so thought of making a basic cupcake. This recipe calls a very few ingredient mostly available and simple to prepare. My kid loved it and this means a lot to me..
RECIPE:

Ingredients:
- All purpose flour: 1 and 1/2 cup
- Curd: 1 cup
- Sugar: 3/4 cup
- Baking soda: 1/2 tsp
- Baking pwd: 1 and 1/4 tsp
- Oil: 1/2 cup
- Vanilla essence: 1 tsp
- Ready made cream frosting as required
Method:
- Mix sugar and yogurt/curd until the sugar is completely dissolved. Add baking powder and baking soda and mix well. Keep aside for 4-5 mins and you will find that bubbles appear.
- Add oil and vanilla essence and mix well.
- Add little portion of flour/maida at a time and blend with the wet ingredients. Beat well until creamy.
- Preheat the oven at 180 degree c.
- Arrange muffin liner in muffin baking tray and fill just 3/4.
- Bake in preheated oven at 180 degree C for 20 mins or till a toothpick inserted into the cupcake comes out clean.
- Cool the cake for 10-15 mins on cooling rack.
- Fill the piping bag with frosting and decorate as you desire.
Note:
- Better to use fine grain sugar as it dissolve easily.
- Can grind the sugar before mixing.
