Litti Chokha







When you think of Bihari cuisine, litti is the first dish which comes to mind. It’s a traditional Bihari dish which has got a global recognition  It is a roasted dough ball with a spicy filling made of sattu. It is mainly  served with chokha made out of potato, brinjal and tomato. The basic ingredient of litti is sattu.


RECIPE:

Cooking Time: 30-40 mins
Preparation Time: 20-25 mins


For Dough:
  • Wheat flour: 1 cup
  • Carom seeds: 1/4 tsp
  • Oil: 2 tbsp
  • Salt to taste

For Filling:
  • Sattu: 1/2 cup 
  • Garlic: 1 tbsp (finely chopped )
  • Ginger: 1/2 tbsp (finely chopped )
  • Green chilies: 1-2 ( finely chopped ) 
  • Coriander leaves: 2-3 tbsp (finely chopped )
  • Carom seeds(ajwain):1/2 tsp 
  • Onion seeds ( Mangrella ): 1/2tsp
  • Lemon juice: 2 tsp
  • Pickle masala: 1 tsp
  • Mustard oil : 2 tbsp
  • Salt to taste

 For Chokha:
  • Round Baigan (brinjal):1 small
  • Tomato: 2 medium 
  • Mustard Oil: 1 tbsp
  • Green Chilli: 4 (finely chopped)
  • Onion: 1 small( finely chopped)
  • Garlic: 2 tsp( finely chopped)
  • Coriander leaves
  • Salt to Taste

Method:



For Filling:
  • In a bowl combine all ingredients of filling, mix well.
  • Add little water to make a stuffing. The stuffing should be like bread crumbs texture.

For Dough:
  • Combine flour, salt and oil and mix well.
  • Slowly add water and make a soft and smooth dough .
  • Make balls out of dough and keep aside.

Litti:


  • Make small cup out of dough ball,in your palm( as shown in pic) 
  • Fill with sattu mixture and close it from all sides,like kachori, make sure that no cracks are there. 
  • Grill for 30-35 mins or bake in a preheated oven, at 180 C for 30-40 min or till done.
  • Turn litties in between so it get cooked evenly.
  • Serve hot with chokha and lots of ghee.


Chokha:
  • Boil or roast the tomatoes and clean  it by removing it skin, keep aside. 
  • Roast the brinjal from each sides until it become soft; remove the skin and keep aside. 
  • In large bowl add tomato, brinjal, green chilli, garlic, salt and mustard oil.
  • Mix well to make chokha and garnish with coriander leaves.



Note:
  • I prefer to grill the litties over baking as in baking outer shell gets hard as compared to grilling.
  • If you are baking then apply little oil on it before baking.
  • You can also fry these litti.
  • In chokha you can also add boiled potato.
