Katori chaat



Chaat is something which is loved by all age group. Katori chaat is a new addition in my chaat menu. I tried it few weeks before only at the chaat counter at food court , from that time I wanted to give it a try but was bit hesitant as making katori is quite tricky part but this weekend I overcome my fear and prepared it and it turn out good.  

RECIPE:


Cooking Time: 30-40 mins
Preparation Time: 20-25 mins

Ingredients:

For katori:
  • Maida: 1 cup
  • Ajwain (carom seeds): 1tsp
  • Oil/ ghee: 1 tbsp
  • Salt to taste
  • 4-5 medium size steel bowls( shown in pic)
  • Oil for deep frying

For  Chaat:
  • Chole: 1 large bowl 
  • Potato: 1-2 (boiled, peeled and cubed).
  • Onions: 1 large (finely chopped)
  • Green chutney: 1/4 cup
  • Tamarind chutney: 1/4 cup
  • Curd: 1/2 cup
  • Chaat masala: 2 tbsp
  • Red chilli pwd: 1 tbsp
  • Sev bhujiya: 1/3 cup
  • Roasted cumin pwd: 1 tbsp
  • Coriander leaves ( finely chopped) 
  • Salt to taste
Method:

For Katoris:

  • Combine maida , oil, salt and ajwain in a bowl and mix well.
  • Add water enough to make a smooth dough, it should not be soft like a regular dough.
  • Divide the dough into lemon size ball and roll out the balls( as shown in pic).



  • Take a steel bowl up side down and place the rolled dough onto it firmly (as shown in pic)and remove the excess dough. Make a dent on rolled dough, it will prevent it from puffing.
  • Heat sufficient oil in pan /kadai.



  • Fry one katori at a time into it. If katori starts leaving the edge of the bowl then hold the bowl  and remove the maida katori into oil and take off the bowl, If it doesn't happen nothing to worry, take out maida katori with bowl and then remove. Once katori is fried remove on a paper napkin for absorbing excess oil. 
  • Clean the oil properly from the used bowls if you are using them again for preparing katoris.

For Katori Chaat:


  • Sprinkle pinch of chaat masala and red chilli on diced potato.
  • Place one katori in serving plate and pore 1 ladle of  chhole in a katori. Add few pieces of potato.
  • Add 1-2 tbsp of curd/yogurt.
  • Drizzle tamarind chutney and green chutney(as per taste).
  • Sprinkle chat masala, roasted cumin pwd and chilli pwd.
  • Garnish with chopped onion, sev, chopped coriander leaves.
  • The mouthwatering chaat is ready.



Note:
  • Can also bake these katori using muffin moulds if you wants to make it healthier.
  • Unsweetened tart shell can also be used as katori.
