When Aloo and Bhindi are prepare together, they taste awesome. Aloo bhindi is very easy to prepare and goes well with roti or paratha. Earlier I was not sure about the taste as my mom never prepared this at home but when I prepared it for first time I was quite puzzled that why am never tried this super easy and tasty dish.

Ingredients:
- Bhindi/Okra: 10-12 (Washed, patted dry and cut into 1″ long pieces)
- Potatoes : 2 medium (Boiled Peeled and diced)
- Onions : 1 big (Finely chopped fine)
- Tomatoes : 2 medium (Finely chopped fine)
- Ginnger-garlic paste: 1 tsp
- Turmeric pwd : 1/2 tsp
- Red Chilli pwd : 1/2 tsp
- Coriander pwd : 1/4 tsp
- Cumin pwd: 1/2 tsp
- Salt to taste
- Oil to cook
- Coriander leaves : few string (chopped)
- Fry the bhindi/okra for 5-8 mins or till done. Take out and set aside.
- Fry the boiled potatoes till browned and set aside.
- Heat a little oil and add cumin, once it starts spluttering add ginger-garlic paste. Cook for few sec and add chopped onion and saute till transparent or light brown in color.
- Add the chopped tomatoes and salt and cook till tomatoes are soft.
- Add the turmeric pwd, cumin pwd, chilli pwd and coriander pwd. Mix well and cook till oil starts separating.
- Add fried bhindi, potato and coriander leaves. Mix well and cook for few more mins.
Note:
- Can replace boiled potatoes with deep fried potatoes.
