Aloo paratha doesn't need any introduction/description. I don't think there is anybody who don't know what aloo paratha is !!! Even my lil son likes aloo paratha. This version of Aloo Paratha is totally my style.
RECIPE:

Ingredients:
For paratha:
- Wheat flour/atta: 2 cup
- Ghee: 1 tbsp
- Salt as per taste
For stuffing:
- Potatoes: 2 large (boiled, peeled and mashed)
- Green chili: 1(finely chopped)
- Onion: 1 small( finely chopped)
- Carrot: 1/3 cup ( grated)
- Cauliflower: 1/3 cup( finely chopped) ......( optional)
- Coriander leaves: 1-2 tsp(finely chopped)
- Turmeric pwd: 1/4 tsp
- Cumin seed/jeera: 1/4 tsp
- Cumin pwd: 1/3 tsp
- Chilli pwd: 1/4 tsp
- Salt to taste
- Ghee or butter
Method:
- Take a large bowl and add salt, ghee to the atta, mix well, slowly add water to make a soft dough.
- Cover with damp cloth and let it rest for 5-10 mins.
- For stuffing heat the oil in kadai/pan and add jeera and green chilli.
- When jeera start splutter then add Onion and saute till onion is transparent then add the finely chopped cauliflower cook for 4-5 mins then add the grated carrot.
- Cook for another 3-4 mins then add the mashed potato coriander leaves, turmeric pwd, cumin pwd, chilli pwd and salt and mix well.
- Now divide the dough into equal size ball. The dough ball should not be bigger then large lemon sized ball.
- Divide potato filling in equal size ball.
- Make small cup out of dough ball,in your palm(as shown in pic) and place potato ball in center and seal by pulling the sides of dough ball.
- Repeat the same with the rest.
- Dust the working surface with some atta and roll out the stuffed dough.
- Heat tawa/griddle and once its hot, place a paratha and let it cook for few second then flip it to other side and let it cook for a few more secs.
- Then apply butter or ghee and roast to a golden shade on both sides.
- Serve hot with yogurt or raita.
Note:
- Use ghee to roast paratha for better taste.
- Serve paratha with a topping of butter, it tastes awesome.
