Palak Paneer Kofta is delicious, healthy and can be prepared in less time. The gravy of this dish is some what similar to Malai Kofta gravy. Its great to serve these Kofta Balls as starters.

Ingredients:
For Kofta:
- Paneer: 1 cup ( crumbled)
- Spinach: 1 bunch( finely chopped )
- Cornflour: 2-3 tbsp
- Cumin seed: 1/4 tsp
- Garlic: 2-3 pod( finely chopped)
- Cumin pwd: 3/4 tsp
- Red chilli pwd: 1/2 tsp
- Salt to taste
- Oil for deep frying
For gravy:
- Onion: 2 medium(Chopped)
- Onion: 1 small( juliennes)
- Tomato: 2 medium(Chopped)
- Ginger garlic paste: 1 tsp
- Turmeric pwd: 1/4 tsp
- Coriander pwd: 3/4 tsp
- Cumin pwd: 1 tsp
- Garam masala: 1 tsp
- Kitchen King masala pwd: 1 tsp
- Chilli pwd: 1/4 tsp
- Salt to taste
- Coriander leaves: few strings
- Oil for cooking
- Clean and chopped the palak/spinach.
- Heat little oil in kadai/pan and add cumin/jeera seed,once they start spluttering add chopped garlic.
- Add the the chopped palak/spinach, cook till all moisture evaporate and shrink in size. turn off the heat.
- Add this palak mixture and crumbled paneer, mix well.
- Add cumin pwd, red chilli pwd, salt, cornflour and mix well.
- Make a small size ball of palak-paneer mixture.
- Heat sufficient oil in kadai and fry these ball till they turn brown on medium heat.
- Once done , take out these ball and set aside.
- Heat 1-2 tsp oil in kadai/ pan and add chopped onion, saute for 2-4 min then add chopped tomato and saute for 2-4 min.
- Cool down onion tomato mixture and then grind it. keep aside.
- Heat 2-3 tsp oil in kadai/ pan and cumin seed, once they start spluttering add ginger garlic paste and cook for few sec. Add onion juliennes and cook till onion turn light brown in color.
- Add the onion-tomato paste, salt and all dry masala pwd and cook for 4-5 mins or till oil starts separating.
- Add the coriander leaves, mix well.
- Add water as per your desire thickness and cook for few mins.
- Transfer kofta curry to serving bawl and arrange kofta and serve with paratha/rice/pulao.
Note:
- Add more corn flour if needed.
- Can add chopped green chilli.
- Add cream or cashew paste to make gravy more rich and creamy.
