Kabab is the famous starter/appetizer, but for vegetarian the option is very limited. Few weeks back I prepared this kabab at home and it turn out good,but some how I forget to post the recipe. Yesterday when I was going through the post, I was quite surprise to see this recipe in draft.
RECIPE:

Ingredients:
- Paneer: 1/2 cup ( crumbled or grated)
- Mushroom: 1/2 cup ( finely chopped)
- Potatoes: 1 large (boiled, peeled and mashed)
- Green chili: 1(finely chopped)
- Onion: 1 small( finely chopped)
- Coriander leaves: 1-2 tsp(finely chopped)
- Turmeric pwd: a pinch
- Cumin seed/jeera: 1/4 tsp
- Cumin pwd: 1/3 tsp
- Chilli pwd: 1/4 tsp
- Salt to taste
- Oil to cook
Method:
- Heat the oil in kadai/pan and add jeera and green chilli.
- When jeera start splutter then add Onion and saute till onion is transparent then add ginger-garlic paste and cook for 1-2 mins.
- Add the finely chopped mushroom cook for 3-4 mins then add turmeric pwd, cumin pwd, chilli pwd and salt and mix well. Cook for a mins.
- Add the mashed potato, paneer and coriander leaves and mix well and cook for another a min.
- Take a portion of this mixture and place on a skewer and press it around the stick till it is evenly layered. Press the ends firmly.
- Place kababs on hot griddle and cook, brush with oil on each side and cook for three 3-4 mins or till lightly coloured all around.
- Serve hot with green chutney.
Note:
- Can add any other veggies of your choice.
- Can also sprinkle little chaat masala while serving.
