Smiley Cookies


These Smiley Cookies have chocolate flavor and simple vanilla flavor. My kid loved it.This recipe requires very few ingredients and easy to prepare. Both the flavor and crunchiness of cookies are awesome. Can prepare and store in air tight container for 1-2 weeks.

RECIPE:

Baking Time : 10-15 mins( one batch)
Preparation Time:1 hr

Vanilla Dough:
  • All purpose flour/maida: 1& 1/4 cup
  • Butter: 1/2 cup
  • Powdered sugar: 1/4 cup
  • Vanilla essence: 1/2 tsp
  • Baking pwd: 1/2 tsp

For Cocoa/chocolate Dough:
  • All purpose flour/maida: 1& 1/4 cup 
  • Butter: 1/2 cup
  • Powered sugar: 1/4 cup
  • Cocoa pwd: 2 tbsp
  • Vanilla essence: 1/2 tsp
  • Baking pwd: 1/2 tsp

Method:

For Vanilla Dough:




  • In a mixing bowl combine the powdered sugar and butter. Cream butter and sugar until light and fluffy.
  • Add vanilla essence and mix well.
  • In a wide bowl sift the all purpose flour, and baking pwd.
  • Add the all purpose flour/maida to butter mixture and mix well.
  • Shape it into a square and cover with plastic wrap.
  • Refrigerate for 40-45 mins.


For Chocolate Dough:


  • In a mixing bowl combine the powdered sugar and butter. Cream butter and sugar until light and fluffy.
  • Add vanilla essence and mix well.
  • In a wide bowl sift the all purpose flour, and baking pwd.
  • Add the flour mixture and cocoa pwd to butter mixture and mix well.
  • Shape it into a rectangle with the thickness of 1/2 inch and cover with plastic wrap.
  • Refrigerate for 40-45 mins.


How to proceed:


  • Take the dough out, and roll between two butter paper or plastic wrap  ( this makes rolling easy) and form a log(use flour to dust if needed). Do it for both the dough.
  • Preheat the oven at 170 deg C for 8-10 mins.
  • Create a spiral using both the logs.( as shown in pic).
  • Again roll with hand and form the even log as shown in pic.


  • Cut these log in slices and make a ball. Flatten these ball slightly.
  • With help of toothpick make eyes and mouth of Smiley as shown in pic.


  • Place the cookies on the lined butter paper leaving space between each cookie. Bake it at 170 deg C for 10-12 mins or until the edges are slightly golden brown.
  • Once done then transfer these cookies carefully in a rack and cool it. Store in airtight container. 



Note: 
  • Check the cookies after 10 mins as the cookies tend to easily burn. Make sure to take out when the edges start browning. It will be soft when taken out, will become crispier once cooled down.
  • If you are baking in batches then keep the remaining smiley cookies in the fridge.
