American Chopsuey is a Indo-Chinese dish where crispy fried noodles are served with Chinese style sauce. I like chopsuey a lot specially prepared by Avi as veg version of this dish is not very much popular. I simply love the way he prepares it. Last week when he was preparing, I asked him to take the pics of steps so that I can post this recipe.
RECIPE:
Cooking Time: 25-30 mins
Preparation Time: 15-20 mins
Ingredients:
Noodles: 1/2 pack
Onion: 1 small(diced)
Carrot: 1/4 cup ( diced)
Capsicum: 1/4 cup ( diced)
Beans: 5-6 pcs ( cut diagonally)
Ginger: 1/2 tbsp( finely minced)
Garlic: 1/2 tbsp(finely minced)
Green chilli: 1(finely chopped)
Soya sauce: 2 tsp
Red chilli sauce: 2 tsp
Tomato sauce: 3 tbsp
Corn flour: 1 & 1/2 tbsp
Oil to fry
Salt to taste

Corn flour: 1 & 1/2 tbsp
Oil to fry

For The Fried Noodles:
- Take a wide open pan and boil the noodles.
- Once the noodles are boiled then stain it and wash with cold or normal water. Keep aside.
- Heat oil in pan/kadai and deep fry the boiled noodles on low to medium heat till it's almost cooked.
- When noodles are almost done then increase the flame and fry it till it turns golden brown and keep aside.
For The Sauce:
- Heat oil in a large wok/kadai and add the chopped garlic and stir fry for a few seconds. Add the green chilli and ginger and stir fry on high for a few seconds.
- Add the diced onions, carrot, beans and capsicum and stir fry on high for 2-3 mins
- Add soya sauce, tomato ketchup and red chilli sauce. Mix well and cook for a min.
- Mix 1& 1/2 tbsp cornflour with 1 cup water and add to above sauce and cook for 2-3 mins.
- The sauce for chopsuey is ready to serve with crispy noodles.
Note:
- Do not over cook the noodles.
- Cook the veggies on high flames to maintain the crunchiness and the smokey flavor.
