Paneer Calzone


Calzone is nothing but a folded pizza and Paneer Calzone is my latest experiment. The typical calzone is stuffed with tomato, mozzarella, and sauce, and may include other ingredients that are normally associated with pizza topping but here I have used all total different stuffing.

RECIPE:

Cooking Time: 15-20 mins
Preparation  Time: 25-30 mins
Resting Time: 1-2 hrs

Ingredients:

For the dough:
  • All purpose flour/Maida: 1 & 1/2 cups
  • Active dry yeast: 1 tbsp
  • Milk: 1/4 cup
  • Water: 1/4 cup
  • Sugar: 1/2 tblsp
  • Salt: 3/4 tsp
  • Oil: 2 tbsp

For the filling:
  • Paneer: 1/2 cup
  • Onion: 1 small( finely chopped)
  • Tomato: 1 small ( finely chopped)
  • Capsicum: 1/4 cup ( finely chopped)
  • Turmeric pwd: a pinch
  • Red chilli Pwd: 1/6 tsp
  • Cumin pwd: 1/3 tsp
  • Salt to taste
  • Coriander leaves: few springs

Method:

For the filling:



  • Heat oil in kadai/pan and add chopped onion, cook till it start turning light brown .
  • Add the tomato and capsicum. Cook till tomatoes turn soft.


  • Add all the dry masala and salt and cook for another 2-3 mins.
  • Add the paneer and coriander leaves , mix well so that paneer are well coated with masala. 
  • Cook for 1-2 mins. turn off the heat .

For the dough:


  • Boil the water and keep aside. 
  • Now add milk, oil, sugar, salt to boiled water in wide vessel and mix well till sugar dissolves. 
  • Add the yeast to the milk-oil solution.
  • Mix well and keep aside for 5-7 mins stirring occasionally.
   

  • Take the all purpose flour in  a large bowl and add the milk-oil solution to make a dough.
  • Covered the dough and keep for 1-2 hrs in warm place.( it will rise double by that time).
  • Punch down the dough and divide into same size ball.


  • Roll out dough ball  into a circle.
  • Put a portion of the filling on  rolled circle.
  • Fold each circle to form a semicircle.


  • Seal the ends and press the edges firmly with the help of a fork.
  • Place on a greased baking tray and brush with melted butter. Keep aside for 5-10 mins.( it will rise a bit)
  • Bake in oven at 200 C for about 15 mins or until they are evenly browned.
  • Serve hot.




Note:
  • Can brush with melted butter after removing from oven.
  • The dough should not be sticky, if so then add in a little more flour.
  • Can add prepare stuffing of your choice.
