Gobi Paratha


Gobi/Cauliflower is one of my favorite veggie. Gobi Paratha is one of the popular paratha.You can serve as breakfast or dinner.
RECIPE:

Cooking Time: 20-25 mins
Preparation time: 15-20 mins

For the  Dough:
  • Wheat flour: 1 & 1/2 cups
  • Salt as per taste
  • Oil: 3 tsp
For the stuffing
  • Cauliflower: 3/4 cup ( Grated)
  • Turmeric pwd: a pinch
  • Red chilly pwd: 1/4 tsp
  • Cumin seeds: 1 tsp
  • Oil for cooking
  • Salt as per taste
  • Coriander leaves: Few spring
  • Ghee for toasting paratha

Method: 

For the Stuffing:

  • Heat the oil in a pan and add the cumin seeds.
  • When the cumin seeds spluttering then add the onions and green chillies and saute for a min. 


  • Add the cauliflower, salt and mix well. Saute till raw smell of cauliflower leaves 
  • Add the turmeric pwd, chilli pwd, cummin pwd and coriander leaves, mix well and cook for another 3-4 mins with lid closed. By this time cauliflower would have turned soft. Turn off the heat and keep aside.

For the Dough:


  • Combine flour, salt and oil and mix well.
  • Slowly add water and make a soft and smooth dough .

For the Paratha:


  • Make same size balls out of dough and keep aside.
  • Make small cup out of dough ball,in your palm(as shown in pic) 
  • Fill with cauliflower mixture and seal by pulling the edge.
  • Repeat the same with the rest.


  • Dust the working surface with some wheat flour/atta and roll out the stuffed dough.
  • Heat tawa and once its hot, place a paratha and let it cook for few seconds then flip it to other side and let it cook for a few more secs.
  • Apply butter or ghee and cook till golden brown on both sides.
  • Serve hot with yogurt, pickle or tomato chutney.


Note:
  • Can skip adding green chillies if making for kids.
  • Can add the little quantity of garam masala pwd to cauliflower mixture.
