Ingredients:
- Milk : 3 cups
- Bread: 5 slices
- Saffron: few strands
- Ghee to fry
- Nuts: 2 tbsp ( chopped)
- Sugar : 1/4 cup
- Water : 1/2 cup
Method:
- Soak saffron strands in warm milk, keep aside.Boil the milk in a heavy bottomed pan on medium heat. Boil the milk till it is reduced to almost 1/3 of the original quantity stirring occasionally. Once reduced in quantity, add in the sugar and the saffron milk to the boiled milk and stir well until everything mixed well.
- Remove the corners of the bread and cut into 2 pieces.Shallow fry the bread in ghee such that it becomes crisp. Keep aside.
- Prepare sugar syrup by heating sugar and water in a pan until a syrup like consistency is formed. It should be thick and sticky. Keep aside.
- Soak each slice in the sugar syrup and arrange it in a plate.Then pour the prepared milk(rabri) over the bread slices to soak well. Garnish with chopped nuts toasted in ghee. Serve chilled.
Notes:
- To make it healthier you can use brown bread and toast them instead of deep frying.
- Deep fried/toasted bread slices should be crispy else when soaked in milk it will become soft.
- You can use either white or brown bread.
