Few days back I thought to give a try to muffins which my co-sister makes(I really like the taste of that muffin). I tried to call her but unfortunately not able to contact her so I thought to search for the muffin recipe which she makes and I found the one over here. When I baked these muffins they where somewhere near to what my co-sister makes. Was really very happy with the outcome of these muffins, even my lil one said that this is just like Badi Mumma's muffin.
RECIPE:

Ingredients:
- All purpose flour: 1& 1/2 cup
- Orange juice: 1 cup
- Sugar:1/2 cup
- Vegetable oil: 1/3 cup
- Yogurt/curd: 1 tbsp.
- Baking powder: 1 tsp
- Baking soda: 1/2 tsp
- Orange zest: 1 tsp.
- Salt: a pinch
Method:
- Preheat oven at 180°C and grease a muffin tray or line it with paper cups.
- In a bowl combine four, salt, baking powder, baking soda, orange zest and mix well.
- In another bowl add orange juice, sugar, yogurt (curd), oil and beat for a few minutes till sugar is dissolved.
- Add dry ingredients into the wet ingredients and mix all the ingredients. Do not over mix the batter.
- Pour the batter in the muffin tray and fill each cup till it is 3/4th full.
- Bake the muffins at 180 °C for about 20 minutes or till the top turns golden brown in colour. Take out the baking tray and check the muffins by inserting a knife in a muffin, if it comes out clean the muffins are done.
Note:
- Can add the choco chips to make it more tastier.
- To make a zest just grate the outer layer of orange with a small grater.
Amazingg.. I also make this cake but I make plain cake with pineapple flavor… I usually use kdd harvest’s pineapple juice to make the cake.. I should try orange as well.. thanks for the idea.. good recipe!
