Aloo Gobi is all time favorite recipe of all age group. There are many ways of making aloo gobi,here I'm sharing a dry version. This goes well with roti, paratha, naan or rice.
RECIPE:

Ingredients:
- Cauliflower: 8-10 florets
- Potatoes : 2 medium (cut into wedges)
- Peas/Matar: 1/8 cup
- Onions : 1 big (Finely chopped fine)
- Tomatoes : 1 big (pureed)
- Ginger-garlic paste: 1 tsp
- Kitchen king Masala: 3/4 tsp
- Turmeric pwd : 1/3 tsp
- Red Chilli pwd : 1/2 tsp
- Coriander pwd : 1/4 tsp
- Cumin pwd: 1/2 tsp
- Salt to taste
- Oil to cook
- Coriander leaves : few string (chopped)
- Fry the Gobi/cauliflower for 5-8 mins or till done. Take out and set aside.
- Fry the potatoes till browned and set aside.
- Heat a little oil and add cumin, once it starts spluttering add ginger-garlic paste. Cook for few sec and add chopped onion and saute till transparent or light brown in color.
- Add the pureed tomatoes and salt and cook till tomatoes are soft.
- Add the turmeric pwd, cumin pwd, chilli pwd and coriander pwd. Mix well and cook till oil starts separating.
- Add fried Gobi/cauliflower, potato,matar/peas and coriander leaves. Mix well and cook for few more mins.
- Turn off the heat and transfer into serving dish.
Note:
- Can use Boiled potato in place of fried one.
- Use the fresh peas, it will enhance the taste.
- Do not over cook the gobi/cauliflower else it will spoil the look of dish.
